Ox Tails with Braised Cabbage

Ox Tails

Recipe provided by Sisters of the New South Restaurant

Ingredients

·      15 pounds Ox Tails

·      1 green pepper, diced

·      1 red pepper, diced

·      1 onion, diced

·      1 cup of Sisters Oxtail Seasoning

·      4 quarts flour

·      2 gallons of water

Method

-      Put peppers and onions in bottom of 4 inch deep full size stainless steel pan

-      Add oxtails and then seasoning and add water

-      Cook until tender and remove from broth

-      Place Oxtails into a 4 inch deep ½ size stainless steel pan

-      Mix 4 cups of flour to 1 quart of water to form a gravy batter

-      Add the gravy batter gradually to the broth until desired consistency

 

Braised Cabbage

Ingredients

·      10 pounds cabbage, remove Core, cut into 1 inch strips

·      4 1/3 cups cabbage seasoning

·      ½ cup sugar

·      1 stick of butter

·      2 cups water

Method

-      Place butter in pot

-      Add Cabbage, cabbage seasoning, and sugar on top

-      Add water

-      Cover with aluminum foil and cook until tender, approximately 30 minutes

10 pounds cabbage, remove Core, cut into 1 inch strips
4 1/3 cups cabbage seasoning
½ cup sugar
1 stick of butter
2 cups water

Smothered Shrimp

Ingredients

·      30 shrimp

·      ½ green pepper, cut in strips

·      ½ red pepper, cut in strips

·      ½ medium onion, cut in strips

·      1/8 cup accent

·      2 cups water

Flour Ingredients

·      1 cup flour

·      1 ½ cups water

Method

-      Place water, seasoning, and shrimp in a pot and bring to a boil

-      Add flour mixture (not too thick, not too thin)

-      Add peppers and onions
